Ingredients

  • all-purpose flour 3 cup
  • ground beef or lamb 300 g
  • finely chopped onion 1 piece
  • meat spices and salt 1 tsp
  • whole milk yogurt 1 kg
  • minced garlic 4 clove
  • dried mint 1 tbsp
  • cornstarch 1 tbsp

Instructions

  1. 1 Kneading

Knead the flour with enough water and a pinch of salt until a smooth, soft dough forms; let it rest for 30 minutes.

  2. 2 Seasoning

Prepare the filling by combining the ground meat with the finely chopped onion, meat spices, and salt.

  3. 3 Kneading

Roll the dough out thin and cut it into small squares. Place a small spoonful of filling in each square, fold into a triangle, and join the corners together to shape the dumplings.

  4. 4 Boiling

Boil the shish barak dumplings in boiling water until they float to the surface, then drain.

  5. 5 Frying

Whisk the yogurt with cornstarch in a pot and cook over low heat, stirring constantly until thickened and smooth. Add the garlic sautéed in ghee and dried mint, then add the dumplings and simmer together for a few minutes before serving.
