Luqaimat with Date Syrup and Sesame (Sweet Dumplings)
Luqaimat with Date Syrup and Sesame: golden, bite-sized dumplings that are delightfully crunchy on the outside, light and airy on the inside, and generously drizzled with rich date molasses and toasted sesame for an authentic Gulf treat.
Ingredients
- all-purpose flour 2 cup
- cornstarch (for extra crispiness) 2 tbsp
- powdered milk 2 tbsp
- instant yeast 1 tbsp
- granulated sugar 1 tbsp
- finely ground cardamom 0.5 tsp
- saffron threads (soaked in 2 tbsp warm water) 0.25 tsp
- warm water (for mixing) 1.75 cup
- vegetable oil (for deep-frying) 3 cup
- pure date molasses (date syrup) 0.75 cup
- toasted sesame seeds (for garnish) 3 tbsp
Instructions
-
1
In a deep mixing bowl, whisk together the flour, cornstarch, powdered milk, instant yeast, sugar, and ground cardamom for that signature Gulf aroma.
-
2
Gradually pour in the saffron-infused water and the warm water, beating vigorously by hand or with a wire whisk until you achieve a smooth, stretchy batter that is slightly thicker than cake batter.
-
3
Cover the bowl with a clean kitchen towel and let the batter ferment in a warm, draft-free place for about 40 minutes, until it doubles in size and becomes bubbly.
-
4
Heat the vegetable oil in a deep pot over medium heat, ensuring it reaches moderate frying temperature so the dumplings cook evenly on the inside without scorching.
-
5
Keep a small cup of oil and a teaspoon nearby. Squeeze a portion of the batter through your closed fist so a small ball pushes up between your thumb and index finger; scoop it off with the oiled spoon and release it directly into the hot oil.
-
6
Stir and swirl the dumplings continuously with a skimmer or slotted spoon using a circular motion to ensure they cook evenly and turn golden and crispy all over.
-
7
Once the luqaimat turn a rich, uniform golden brown, remove them from the oil and drain thoroughly in a wire mesh strainer (avoid paper towels to preserve their crunch).
-
8
Transfer the luqaimat to a serving dish while still hot, drizzle generously with date molasses, sprinkle with toasted sesame seeds, and serve immediately alongside traditional Arabic coffee.
