Secrets to Restaurant-Style Homemade Pizza Dough
The perfect pizza dough requires a balance between an airy, tender interior and a crisp exterior, which is easily achieved if you follow the right steps.
Use high-protein flour (such as bread flour or Italian "00" flour) if you can find it. It develops stronger gluten, giving the dough greater elasticity and the ability to stretch without tearing.
Do not rush the kneading process. Knead thoroughly for 8 to 10 minutes until smooth and elastic, then test it by stretching a small piece; if it stretches thin without tearing (the windowpane test), it is kneaded enough.
A long resting period is the real secret. Let the dough ferment in the refrigerator for 24 to 72 hours (instead of just the typical one hour at room temperature). This slow fermentation develops a much deeper flavor and a far superior texture.
Before stretching, let the dough come to room temperature first. Always stretch it by hand rather than using a rolling pin to protect the delicate air bubbles inside, which creates that signature airy crust after baking.
