Ceylon Cinnamon vs. Cassia: The Differences and Which Is Better

Most of the cinnamon sold in supermarkets is actually "Cassia" rather than "true" Ceylon cinnamon, and understanding the difference between the two is essential. Ceylon cinnamon features soft, thin layers rolled tightly like a cigar. It has a light tan-brown color and a delicate, subtly sweet flavor without any harsh bite. Cassia cinnamon, on the other hand, consists of thick, hard, hollow quills made of just one or two curled layers. It has a darker, reddish-brown color with a much stronger, pungent, and slightly bitter taste. From a health standpoint, Ceylon cinnamon is far superior because it contains negligible amounts of coumarin—a natural compound found in high concentrations in Cassia that can harm the liver if consumed regularly in large amounts. This makes Ceylon the safest choice for daily consumption or wellness routines. For general cooking and baking in moderate amounts, inexpensive and widely available Cassia works just fine. However, if you take cinnamon daily or in therapeutic doses, it is well worth seeking out authentic Ceylon cinnamon.
