How to Choose and Maintain the Right Kitchen Knife
A quality knife is one of the most essential kitchen tools, making prep work faster and easier, while choosing the right one and maintaining it properly will significantly extend its lifespan.
A chef's knife with an 8 to 10-inch (20-25 cm) blade is the fundamental tool every cook needs, as it handles roughly 90% of daily cutting tasks, like chopping onions, slicing vegetables, and prepping meat.
When picking a knife, always hold it in your hand before buying if possible. Weight and balance are crucial; the knife should feel like a natural extension of your hand, neither awkwardly heavy nor uncomfortably light.
Caring for your knife matters even more than its price tag. Hand-wash it immediately after use and dry it right away. Never clean it in the dishwasher, as the intense heat and moisture will quickly ruin and dull the blade edge.
Honing and sharpening your knife regularly (roughly once every couple of weeks) keeps it razor-sharp. A sharp knife is actually much safer than a dull one because it requires less pressure, significantly reducing slips and accidental cuts.
Finally, always cut on a wooden or soft plastic cutting board, and steer clear of glass, granite, or marble surfaces, which will ruin your blade edge almost instantly.
